From the Do'an region in Hadramawt, and usually from November, about 40 days are enough for the bees to extract the nectar of the Sidr flowers and produce one of the most expensive honeys in the world.
One of the peculiarities of this honey is that it is harvested by Yemeni beekeepers in a totally artisanal way that uses only their hands without using specific machines or tools.
Another peculiarity of the Yemeni Sidr Honey is that it does not crystallize! Even if its color darkens over time, at least one to two years for a honey from this region, its texture will remain intact.
